Apple Pie


Apple Pie

Ingredients:
For Apple stuffing:
100 gms butter 
2 Red apple (Washington Red Apple) peeled and sliced
1 Green apple (Granny-smith Apple) peeled and sliced
5-6 gms cinnamon powder
15-20 gms powdered sugar.

For short-crust pie:
(Makes two 9" pie crusts)
2 cups flour
2-3 tbsp icing sugar
1/2 teaspoon salt
1 cup butter chilled and diced
1/2 cup ice water

Method:
1. For the filling, melt the butter,add the apples, cinnamon powder and sugar.and cook for 5-7 mins. Its important to sweat up the apples.
2. Let this cool.

For the Crust:
1. Take flour in a bowl add the icing sugar,salt and butter.
2. Cut in the butter until the mixture resembles coarse crumbs.
3. Stir in the ice water, a Tablespoon at a time, until the crust mixture forms a ball.
4. Wrap dough in plastic wrap and refrigerate for 1/2 to 1 hr.
5. Sprinkle flour onto rolling surface. Roll dough out, then divide in half. Roll each half to fit a 9-inch pie plate.
6. Now place one of the crust in the pie plate. Use a fork to prick this so it doesn't rise. And now blind bake this at about 180 degrees for about 8-10 mins.
7. Remove it from the oven and now add the apple pie filling into it.
8.Roll the other half of the pie crust.
9.Now cover the apple filling with this. Bake it for about 30-35 min at 180-200 degrees.



Carrot and Orange cupcakes


Carrot and Orange cupcakes.


Ingredients: 
100 gms maida
10 gms coconut milk powder
10 gms milk powder
50 gms margarine melted/ unsalted butter
4tbs orange juice
1/4 tsp orange essence
1/4 tsb soda bi carb
1/4 tsp vanilla essence
1/2 tsp baking powder
50 gms condensed milk
20 gms powdered sugar
25-30 gms grated carrot

Method:
1)   Sift all the dry ingredients together.
2)   Mix margarine/butter and condensed milk and grated carrot.
3)   Add all the dry ingredients to this and orange juice. Fold in well. Pour into lined cupcake molds.
4)   Bake at 108° C for 25 mins- 30 mins.
5)  Insert a toothpick to check if they are done. Makes about 7-8 cupcakes

Egg-less Vanilla Pancake


Egg-less Vanilla Pancake with Strawberry

Ingredients:

All purpose flour - 1 cup
Sugar - 4 tsp
Cinnamon - 1/2 tsp
Baking powder - 2 tsp
Salt - 1/8 tsp
Whole milk - 1 1/4 cup
Vegetable oil - 1 tbsp
Melted butter - 1 tbsp
Vanilla extract - 2 tsp
Butter or Oil for the griddle



Method:

1. Combine dry ingredients and mix.
2. Mix all the wet ingredients to the dry ingredients .
3.Whisk until they are mixed. Do not over mix. It should still be slightly lumpy. Set aside to rest for a few minutes.
4.Heat a pan with some butter.
5.Pour a ladle full of batter on the pan. 
6.Once you see bubbles all over and the edges are brown, flip the pancake and cook on other side till golden brown.
7.For serving dust some powdered sugar. Add a scope of vanilla ice-cream and strawberries to enjoy your dessert!!

Cold Cheesecake


COLD CHEESECAKE




Ingredients

Digestive Biscuits – 250 gm/ 2.5 cups, crumbled
Butter – 100gm/ 1/2 cup, melted
Cream Cheese - 1 cup/200gm
Condensed milk – 1 tin
Cream – 1 tin/170gm
Vanilla powder – 1 teaspoon
Lemon juice – 1 tablespoon
Gelatin powder – 10gm/ 1 tbsp, dissolved in 1/2 cup hot water OR white chocolate-melted

Method
• Combine biscuit & melted butter.
• Press mixture into a bottom loose cake tin.
 
• Place in fridge for 10 minutes.
 
• Using a food processor, beat cream cheese, condensed milk, cream,vanilla powder & lemon juice until smooth.
• Stir the melted gelatin or melted chocolate into the cream cheese mixture & spoon over the biscuit.
 

• Place in the fridge for 2-3 hours until completely set.
• Serve cut into pieces

Egg-less Tiramisu



Egg-less Tiramisu


Ingredients:
Sponge cake fingers
2 n 1/2 tsp coffee
2 tsp level gelatin
2 tsp sugar
1 n 1/2 tbsp condensed milk
100 gms mascarpone cheese
120 gms rich cream(whipping cream)
Coco to sprinkle
Kahlua liquor(optional)

Method:
1) In 1/4 cup water add gelatin and soak for 5 mins and melt on double boiler and add 2 tsp coffee.
2) In 1 cup water dissolve 1/2 tsp coffee and 2 tsp sugar and bring to boil. Take a glass bowl(square shape or rectangular) or any other bowl to set Tiramisu. Line this base with cake fingers and soak with coffee mixture.
3)Beat the whipping cream till soft peaks stage.
4)Beat the cheese and condensed milk till smooth.Add melted gelatin and coffee mixture and mix.To this add the beaten cream and fold in.Check the sweetness and if desired add more condensed milk.
5)Pour this mixture on cake base,keep to set in refrigerator.
6)Sprinkle drinking chocolate or coco on top before serving.
